What You’ll Need
Base
200g dried pears
¼ cup white wine
30g butter, softened
1/3 cup dark brown sugar
Cake
60g butter, softened
2/3 cup dark brown sugar
1 x egg
1 ½ cup self raising flour
½ cup milk
Method
- Place pears in a bowl and pour over wine. Microwave for 2 minutes on high and then leave to soak.
- Grease and line a 20cm round cake tin. Cream butter and sugar of base and spread on the bottom of the tin. Place pears on top of the mixture to make a pattern.
- To make cake cream butter and sugar then beat in the egg. Carefully mix in the flour and milk alternately. Spread over the base and bake for 45-50 minutes at 180°C.
- Leave cake to cool in tin, then invert onto a plate.
