Sticky Prune & Banana Pudding

Prunes are the new kid on the block and are the centrepiece of this delicious pudding.

A perfect way to warm up on a cooler evening

What You’ll Need

1 x 250g packet Sunbeam Pitted Prunes, chopped
¼ cup red wine
¾ cup water
1 teaspoon bicarbonate of soda
60g butter, softened
½ cup brown sugar
2 x eggs
1 ½ cups self raising flour
1 very ripe banana, mashed
Butterscotch Sauce:
¼ cup red wine
¾ cup dark brown sugar
¾ cup cream
100g butter


  1. Combine prunes, wine and water in a pan and bring to the boil. Remove from heat and add soda. Process mixture until smooth.
  2. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in flour, prune mixture and banana.
  3. Pour into a greased and lined 20cm round tin and bake for 45 minutes at 180°C.
  4. To make sauce combine all ingredients in a saucepan and stir over medium heat until sugar is dissolved. Pour ¼ cup of sauce over pudding and return to the oven for a further 5 minutes.
  5. Cool for 10 minutes before turning out. Serve with remaining sauce and ice cream.
